Wild Mushroom & Avocado Breakfast on Toast.

Makes 1 - 300 Calories


1 Cup Dried Wild Mushrooms

1 Cup Water

1/2 Avocado

1 Slice of Brown Bread

1 TBSP Dried Cranberries

1 TSP Fresh Tarragon


Method: In a wide pan fast boil the dried mushrooms in the water for 10 minutes or until the liquid has evaporated and the mushrooms are plump. Toast the bread until golden Slice or spread the ripe avocado over the toast. Pour over the mushrooms. Sprinkle over the cranberries and Tarragon. How easy is that!
