Rich vegan Tomato Soup recipe

Makes 5 - 150 Calories Per Serving



INGREDIENTS:


1600g Tinned Chopped Tomatoes

2 Medium Carrots Roughly Chopped

1 Red Bell Pepper Roughly Chopped

1 White Onion Roughly Chopped

6 Garlic Cloves

1 Pint Water

2 TBSP Vinegar

1 TBSP Chopped Dates

Salt to Taste


Method

In a large pan simmer everything for 45 minutes. Then blend in a high powered blender until smooth. Store in the fridge and reheat when needed.
