Smoked Cajan Sweet Potato

Gnocchi Serves 1. 350 Calories


1 Large Sweet Potato

1 Carrot grated

1 Apple finely chopped

1/2 Lime Juice

TBSP Fresh Corriander

Pinch Salt

1/2 tsp liquid smoke

1 TBSP Cajan Spices

1 TBSP Coconut Flour

Balsamic Syrup


Microwave Potatoe for 9 minutes

Place the carrot, apple, coriander, lime juice, and mix together.

Scoop out the flesh of the sweet potato, add the liquid smoke, add the salt, cajun spices and coconut flour and mix together. Roll into small balls.

Place the salad on the bottom of the plate and serve the gnocchi around. And drizzle around with the balsamic syrup.
