Vegan Weight Loss Tangine

Makes 5 - 550 Calories


INGREDIENTS:


12 vegan sausages

3 red onions, roughly chopped

200g pitted dates

2 whole lemons

1 pint water

1 tbsp mint sauce

30g Moroccan spices

2 tbsps dried herbs

2 tins good quality chopped tomatoes

1 heaped tbsp Marmite

1 tbsp tomato ketchup

1 courgette, roughly chopped

5 mixed peppers, roughly chopped

1 tsp ground garlic


METHOD:


Place water, tomatoes, dates, ketchup, Marmite, courgette, peppers, garlic, onions , 1 tbsp herbs , 20g Moroccan spices in pan.


Stir, place lid on pan and cook over medium heat and boil for 1 hour.


Mix the sausages, 1 tbsp herbs, 10g Moroccan spices and mint sauce into a paste and round into balls.


Place balls under grill for 10-15 minutes.


Take lid off pan and reduce sauce down.


Add vegan sausage balls and serve.
