  • 1 tablespoon olive oil

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 1 tablespoon ginger, minced

  • 1 tablespoon curry powder

  • 1 teaspoon ground cumin

  • 1 teaspoon ground turmeric

  • 1/2 teaspoon ground coriander

  • 1/2 teaspoon ground paprika

  • 1 tin (400g) chopped tomatoes

  • 1 tin (400g) chickpeas, drained and rinsed

  • 500g mixed vegetables (e.g., carrots, bell peppers, courgettes, cauliflower)

  • 1 tin (400ml) coconut milk

  • Salt and pepper, to taste

  • Fresh coriander, for garnish


  1. Heat olive oil in a large frying pan or saucepan over medium heat. Add the chopped onion and cook until softened about 5 minutes.

  2. Add the minced garlic and ginger, cooking for another 1-2 minutes.

  3. Stir in the curry powder, ground cumin, ground turmeric, ground coriander, and ground paprika. Cook for another 1-2 minutes, allowing the spices to release their aroma.
